Collagen Coconut Chocolate Chip Cookies

Ingredients:

  • 2 whole eggs
  • 1 T coconut oil
  • 1/4 C honey
  • 1 t apple cider vinegar
  • 1/2 t baking soda
  • 2/3 C oat flour
  • 2 scoops ForestLeaf Advanced Collagen Peptides
  • 1 C shredded coconut
  • 1/2 C chocolate chips

Instructions:

  1. Pre-heat the oven to 350°F.
  2. Using a mixer, beat the eggs, oil and honey until combined.
  3. Add the apple cider vinegar and baking soda to the mixture and beat until combined.
  4. Pour the oat flour and Coconut Collagen Creamer into the bowl and mix until the entire batter is smooth.
  5. Using a spatula, fold the shredded coconut and chocolate chips into the batter.
  6. Line a cookie sheet with parchment paper and grease lightly.
  7. Scoop cookies onto the parchment paper approximately 1 inch apart.
  8. Bake cookies for 15 minutes and cool the tray for 10 minutes before serving.

I am just curious how baking cookies with Collagen Peptides or mixing the product into food can accommodate the advice to take the product on an empty stomach – these are opposing concepts. The Directions on your website read: “Best taken on an empty stomach. Collagen requires 2-3 hours for digestion. Allow 2-4 months for best results.” AND “Collagen Peptides are extra easy to consume – just mix them seamlessly into food or drink. No need to keep count of capsules and pills.” What am I missing?
